Brussels endive or chicon is wonderful in salads with blue cheese and walnuts

Brussels endive is also called endive or chicon. Winter vegetable that is appreciated for its bitterness and texture. Raw, cooked or braised, it adapts easily. it goes great in salads or to cook gratins with a white bechamel sauce.

Optimal Germination Temperature: 16C

Germination time in days: 7-15 days

Indicative Days to maturity: 60-80 days

Sunlight: Full sun

Soil requirement: rich and well drained

Sowing and cultivation: Sow seed directly outside in full sun once soil temperatures are above 15 C. Keep moist. Germination may be slow. Thin to 2-3" apart. Needs to be forced in the winter. Harvest when size is about 6-8" long
