A forgotten super food

Loved for its color and it's one of a kind flower clusters forming long, drooping tassels of purple-red flowers, its leaves are reddish and form a bushy type plant . Will grow to a height of 3 feet and spreads to an equal width. Amaranthus caudatus is also a leaf vegetable that was grown by the Aztecs and represented a staple in their alimentation. Its grains are cooked like rice, or popped just like pop corn and its young leaves can be used like spinach. Harvest flowers for drying and hang upside down in a dark room with good airflow.

Sowing and cultivation: Start indoors 4-6 weeks before last frost. Sow on surface, lightly covered at a 18C soil temperature. Direct sow outdoors after last frost. Grows to 60-120 cm . Space 45-60 cm apart.
