The Saint-Victor winter” leek is very resistant (to cold, freezing) and very tasty. It can be sowed from March to May for October to March harvest. It is a short variety at its root end since it produces fairly short but quite thick stalks with a purplish-green foliage. The foliage turns violet with the cold. This winter leek is fabulous in soups, stews, gratins and quiches. Great for autumn and winter planting.

Indicative Days to maturity: 100–120 days

Sunlight: Full sun

Soil requirement: Light, well drained

Sowing and cultivation: Sow indoors covering the seeds with 0.5 cm of soil, tamp the soil and keep it cool. When the plants have reached the size of a pencil, shorten the leaves and transplant every 10 to 12 cm, in furrows 10 cm deep, spaced 30 cm apart. It is also possible to sow directly in the ground, in lines 30 cm apart. For fall sowing, sow in place indoors at the end of August, transplant in November for a spring harvest.
