Puntarelle Catalogna di Galatina Chicory or radicchio is an Italian heirloom variety, originating from the town of Galatina in Puglia. It produces small, hollow white shoots that are concealed under jagged, dark green and white serrated leaves. The most highly-prized part is the heart, known for its crisp texture and sweeter flavor, which beautifully contrasts with the soft, bitter leaves. The flavor profile is a unique combination of dandelion, rocket, and liquorice-scented fennel. While preparation may take some time, the resulting taste is well worth the effort. The older leaves can be quite bitter, but can be made milder simply by washing or blanching. This cool season crop can be planted in autumn or spring, and is suitable for year-round cultivation in regions with mild winters.
