The variety was introduced to the public by Bill Minkey in 1993. This variety produces large, beefsteak-style fruits weighing over 1 pound. The fruits ripen to a pale greenish-yellow with a slight pink blush on the blossom end. The flesh is lime green, resembling a sliced kiwi, with a unique sweet and slightly spicy flavor. Aunt Ruby's German Green tomato is ideal for slicing. This tomato enhances sandwiches, salads, and salsas. Its unique color and flavor also make it suitable for green tomato pie and chutney.
