The Bulgarian carrot pepper, aka shipka, is a beautiful pepper with a bright orange skin and a pointy shape looking a bit like a carrot. The Bulgarian pepper texture is a bit crunchier than other chilies and has a fruity flavour making it ideal for adding to dishes, in salsas and chutneys or roasting and pickling. Its heat level is 5000 to 30000 SHU. Certainly the ones we saved seeds from were very hot. We had been looking for varieties of chilli peppers that would do well in cooler regions and the Bulgarian Carrot pepper is one of them. Very productive.
