Blanc de Vaugirard cabbage is a round shaped mid sized cabbage with very dense purplish outer foliage, that becomes more and more purple as it is exposed to cold, almost like a red cabbage. The inside of the cabbage is yellow, with a tender and crisp texture and a sweet taste. The Blanc de Vaugirard variety performs very well in cold conditions making it suitable for a winter harvest. This cabbage is excellent cooked or eaten raw.
