Celeriac Bianco de Veneto or Verona celeriac is an heirloom celeriac variety, named for the city of Verona in Italy. This heirloom celeriac variety produces a large, round, and knobby root with smooth, cream-coloured flesh that remains tender and flavorful even when fully mature. The Verona celeriac texture is firm yet creamy when cooked, offering excellent consistency for both purees and gratins. As a bonus, its aromatic, dark green leaves can be used in stocks and broths.
