Cornet de Bordeaux escarole or chicory is a French Heirloom from Bordeaux. This hardy and early variety of chicory forms a cone shaped head with long, dark green, slightly curled leaves. The Cornet de Bordeaux chicory texture is firm, crunchy with a slightly bitter taste. Leaves can be used in salads, and can also be cooked in a gratin, with a white sauce or in a bechamel sauce. Cornet de Bordeaux is sometimes called Cornet de Bordeaux endive.
