Purple flower Salsify is a traditional root vegetable, fabulous looking plant bearing striking purple, star shaped flowers ,mainly cultivated for its edible roots. The roots are said to have an oyster like flavour. The young shoots and flowers are also edible and make a great addition to salads.

Sowing and cultivation: Sow salsify seed 12mm deep and at 1/2 cm inch apart. Thin seedlings to 7-10cm apart. Space rows 40 cm apart.Sow outdoor directly about two weeks before the last expected frost. Harvest the roots from november till February as you need them.
