An ideal stuffing aubergine for slow cooking
Rosso di Napoli Aubergine (eggplant) is a variety from Ethiopia which produces fruits that are somewhat larger than the Turkish Orange aubergines. It is advised not to cook over 150°C in order to prevent the fruits from turning bitter. This plant grows vigourously can stand lower temperatures compared to solanum melongena.

Sowing and cultivation: Start indoors 8 to 12 weeks before last frost. Sow at 1/2 cm at soil temperature of 23C and lightly cover. Plant in polytunnel or Transplant out when they are at least two sets of leaves after danger of frost. It is advised to stake the plant. Space plants by 60-80 cm.
