Santorini Paste Tomato is a traditional Greek heirloom variety, believed to have been introduced to Santorini from Syros island in 1850 and cultivated on the island of Santorini by 1875. This small, oblate, ribbed tomato weighs between 30–60 grams and boasts a bright-red hue with a robust, traditional tomato flavor. Known for its drought-hardiness, it thrives in the arid, volcanic soils of Santorini, where it is dry-farmed without irrigation. We can certainly confirm it thrived for us too, here in Cork. The indeterminate, vining plants can grow up to 200 cm in height and benefit from staking and pruning to manage their spread. With a maturation period of approximately 75 days, these tomatoes are ideal for making rich, concentrated paste due to their intense flavor and low moisture content. We have successfully cultivated Santorini Paste Tomatoes in Cork, Ireland, where they have flourished with minimal maintenance. Sowing and cultivation: Start indoors 6-10 weeks before last frost. Sow seed 1/8" deep in a propagator from March in warmth. Keep small plants in a sunny, frost-free environment until they can be planted in the greenhouse from late April or outdoors in late May. Space plants 60 cm apart.
